Radix Eats 04 - The ultimate chicken sandwich!

Sometimes it's nice to go back to basics, with life seemingly getting busier and busier, enjoying something simple can be a refreshing change. Without further ado, here's my fancy chicken sandwich! You will need: A baking tray
A sieve
A medium-sized mixing bowl
Optional for maximum fanciness: Balsamic glaze/cream
Ingredients:
1 loaf of high-quality bread (this is a fancy sandwich after all...) Mixed baby leaf or rocket Mayonnaise
3-4 breasts of chicken
3-4 tsp dried mixed herbs
Olive oil
Lemon Juice
Bruschetta dressing:
5 vine tomatoes
1 small red onion
8 leaves of fresh basil
1-2 cloves of garlic
Soya sauce
Balsamic vinegar
Step 1.
Preheat oven to 180°c, fan oven to 170°. (355°F or 340°F)
Add chicken breasts to a baking tray, season generously with salt, and a little pepper.
For every chicken breast cover with: 1 tsp dried mixed herbs
1 tsp olive oil
2 tsp lemon juice Salt and pepper

Place in your preheated oven, cooking time depends greatly on the size of the breast, but it's extremely important for taste and texture to get it right. I recommend having a food thermometer handy so you can take them out as close to 75°C as possible. Step 2. While the chicken is cooking, it's time to prepare your bruschetta dressing. Place your sieve over your mixing bowl for this step.
Chop tomatoes into small cubes, you don't need to deseed them, just cut into slices, then those slices into strips, then those strips into cubes, as small as you can get them. Add chopped tomatoes to the sieve.
Finely mince your red onion, and finely chop your basil leaves and garlic. Add to mix.
Season with salt and pepper and stir. The salt will remove a lot of the water content from the tomatoes into the sieve beneath, leave to sit for 5-10 mins.
Once the salt has worked its magic, pour the drained tomato juice down the sink and tip the tomato mixture into the mixing bowl.
Add 1 tbsp balsamic vinegar
Add 2 tsp soya sauce
Mix.
Once allowed to marinate for 5 minutes, taste for seasoning. Adding more salt may be required at this point.

Step 3. You can serve this sandwich with the breasts cooled down or hot, both are delicious. Slice your chicken into somewhat thick strips. Slice bread, add mayo to both sides. Add mixed leaves/rocket to one side, lay the sliced chicken over the bed of leaves, and then add bruschetta mixture. For added fanciness, pour balsamic glaze over the bruschetta before closing and serving. Bone apple tea, Radix community!
